Before we get into how incredibly fresh our raw fish is, here’s
a little sushi lesson: Raw fish is known as sashimi. Sushi is the
marriage of the ingredients--often including raw fish—and
vinegar rice. Originally, cooks used the bed of vinegar rice to
preserve fish. They would salt the fish and let it mature on the
bed of rice, before throwing out the rice and eating the fish. It
was only later that the vinegar rice would be eaten along with the
sashimi.

You can see the freshness of the tuna, mackerel, shrimp, eel and

meaning it’s high quality, fresh and comes right in from port.
